Sukiyabashi Jiro Tokyo
Sukiyabashi Jiro Honten is arguably the most famous sushi restaurant in the world, the subject of the 2011 documentary 'Jiro Dreams of Sushi' and helmed by Jiro Ono, who received three Michelin stars at the age of 85. The restaurant occupies a small basement space in a Ginza subway station building and seats only ten people at a counter, where a master chef choreographs an omakase of perfectly assembled nigiri at a pace of roughly one piece per minute. The experience — technically precise, emotionally intense, and over in under 30 minutes — represents one of the most concentrated expressions of Japanese culinary dedication available anywhere.
