Ginza Kojyu Tokyo
Ginza Kojyu is an intimate kaiseki restaurant on the upper floor of a Ginza building, operated by chef Toru Okuda whose mastery of traditional Japanese culinary technique has earned the restaurant three Michelin stars. The omakase menu changes entirely with the seasons and showcases the finest available fish, shellfish, vegetables, and mountain ingredients in preparations of exquisite refinement. The ten-seat counter arrangement places guests in direct view of Okuda's meticulous preparation work, and the precision of each course — from the dashi's clarity to the final wagashi sweet — reflects decades of accumulated mastery. Among Ginza's many extraordinary restaurants, Kojyu represents the pinnacle of classic kaiseki.
