Dill is Iceland's most celebrated fine dining restaurant and the country's first to earn a Michelin star, opened in 2009 by chef Gunnar Karl Gíslason in Reykjavik's Nordic House cultural center. The restaurant's philosophy centers on New Nordic cuisine applied to Iceland's extraordinary larder — wild Arctic char, hand-dived sea scallops, moss, skyr, and indigenous herbs foraged from Icelandic fields and shores.
